1.25 lbs ground beef
1 lb ground pork
3/4 cup panko breadcrumbs (lightly crushed)
1/3 cup grated Parmesan cheese
1/3 cup finely chopped parsley
2 large eggs
3 cloves garlic, minced
2/3 small onion, finely grated or minced
1 1/2 tsp salt
1/2 tsp fennel seeds (lightly crushed)
1/4 tsp fresh ground nutmeg
3/4 tsp black pepper
3/4 tsp dried oregano
1/3 cup milk
Preheat Oven: Preheat your oven to 400°F
Combine Ingredients: In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan, parsley, eggs, garlic, onion, salt, pepper, oregano, and milk. Mix until well incorporated, but avoid overmixing.
Form Meatballs: Roll the mixture into balls, 1.5 ounces each.
Cook Meatballs: Place the meatballs on a lined baking sheet. Bake for 20 minutes (flipping at about 15 mins if you'd like more than one side caramelized), or until browned and cooked through.
Simmer in Sauce: Transfer the baked meatballs to 32 oz. of simmering red sauce for at least 30 minutes.
Serving suggestions:
1. Enjoy the meatballs over cooked spaghetti with extra Parmesan and fresh parsley.
2. Toast a sub roll or baguette, brush with garlic butter or oil, add meatballs with sauce, top with provolone, melt under broiler, add fresh parmesan and basil.
